Chicken Alfredo Sandwhich

I absolutely love chicken alfredo pizza but not with all that grease! Maybe some of you like chicken alfredo pasta as well, this is a great alternative. This is a quick easy sandwich to make with only a few ingredients! I skinny-fied the bread by scooping out all of the bread out of the center so you could create a bigger sandwich. This was so yummy and its great for lunch!

Chicken Alfredo Sandwich

Servings: 2 Serving Size: 1 Sandwich Calories: 282 Carbs: 29 Fat: 6 Protein: 29 Sodium: 439

Ingredients:
  • 4 Oz. Take-n-Bake French Bread
  • 6 Oz. Shredded Chicken
  • 1/4 Cup + 2 Tbs. Light Alfredo Pasta Sauce
  • 1/2 Cup Spinach
  • 2 Tbs. Tomatoes Diced
  • 1/4 Cup Shredded 2% Mozzarella Cheese
 Cut the french loaf in half, make the bread skinny by scooping out all the bread from the middle of the top and bottom. Than cut 2 pieces that weigh 2 ounces each.

In a small bowl mix the shredded chicken with 1/4 cup of alfredo sauce, next placing on top of bread. Place 1 tablespoon of the alfredo sauce on each of the sandwiches than pile on 1/4 cup spinach, 1 tablespoon of tomatoes, top it with 2 tablespoons of the mozzarella cheese. Bake the bread according to the directions. I baked mine at 325 for 8 minutes.
